So I finished up day one by eating my leftover Paella. I had a witness (Teresa) monitor me to show her I picked out all of the Chirizo. I did have a bit of fish, but I threw out most of it and ate the rice, which was really good. I realize that a true vegetarian would never have eaten anything if meat were cooked with it, but I still didn't cheat.
I started today with a huge plate of scrambled eggs. Organic of course. I love eggs so that will really help me out. I got home from work and made a tomato salad with fresh mozzarella, olive oil, and balsamic vinegar. Delicious, but I knew it would not keep me full all night. I finished up the evening with a Buffalo staple: blue cheese, celery, and carrots. No wings. :(
I did realize that I need to clean out my fridge and get more veggie options. I will be stocking up on Mac & Cheese. Luckily I also love Morningstar Black Bean Burgers. So far, no struggles. I will be eating more fish soon though. I am making eggplant parm for dinner tomorrow. Mmmmm.

ReplyDeletesoo...i know everyone will think this sounds ridiculous, but morningstar farms makes really tasty buffalo "not" wings (i made that name up but you can figure it out for yourself in the veggie section of the freezer). so you can have a mini buffalo feast sans the chicken...and good luck to you both!
